I think the most striking is the underlying concept of the serie. There is indeed three series, each one being 100 years, or 100 albums, apart. Everything is centered around the Dungeon. The first serie tells of its construction, the second of its zenith, and the third of its dusk. Each new album happens around one year after the one before... and so, little by little, you can see a picture of the timeframe being painted with each serie, all of them getting closer, until they merge. Well, if the authors happen to make it, as this is a lot of dozens of albums !!
Apart from that you have secondary series, one being comical stories around the two main characters of the central serie, Dungeon Parade, and the other a story based on secondary characters of any serie, Dungeon Monsters. And there is also Dungeon Bonus, with the roleplaying game being first published. Nice !
Another striking point is the way all authors work together. They gather to decide the basis of each album, write the scenarios, and make some roughs. Then each one is responsible for a serie, with Sfar, Trondheim, and Christophe Blain for Dungeon Dusk. Parade is done completely by Larcenet, and Monsters has a different artist for each album. There is a lot to bet this last serie will grow quicker, and this is confirmed by the current release planning.
Trondheim's graphical style lays ground for all albums, beyond the theme and the world, all building up with each release. But I dont really know Sfar, who is behind the original idea for all this.
I could go on for long, for instance about the pleasure of eyeing characters evolutions between each serie, but you'd better read them :)
